Elderflower Goodness
This year Elderflower foraging was a family affair, the children locating the choicest bushes and beating paths through brambles, nettles, pink campion, foxgloves and wild mint. We pick what we need, reaching for the choicest heads with yellow pollen dusted hands enjoying the sweet scent and anticipation. Back in the Llysmeddyg kitchen, a day and a night is all it takes to infuse their summer fragrance into a delicious and seasonal cordial.
Elderflower Cordial
30 Elderflower heads
1.7 litres boiling water
700g caster sugar
3 lemons (sliced)
2 oranges (sliced)
50g citric acid
Stir water and sugar until dissolved, leave to cool. Add remaining ingredients and mix well. Cover and leave for 24 hours. Strain through nylon sieve and bottle. Dilute 1 part cordial to 5 parts water. Enjoy.
