Really Wild Evening

On Tuesday night Matt prepared the most extraordinary wild food feast for the Really Wild Food Banquet.

And on his birthday gave us all a present to remember.

The night kicked off with oysters, followed by crab sticks and rock samphire. Llys Meddyg smoked salmon chased cockle ‘popcorn’ and halibut with sea vegetables. For dessert burnt gorse custard and a divine elderflower and rhubarb ice cream!

I must confess I had the best seat in the house, in the kitchen photographing Matt at work. It was a real pleasure to watch Matt weave his magic. Each dish was a work of art, with layers of detail painstakingly thought out and delivered on each plate. And Matt? Cool as a cucumber. He enjoyed every second. What a night!
