When James Oakley said he was off to Hong Kong, we wondered how we would replace him until we had a call from Dan Jones, who was working under Stephen Terry at the Hardwick in Abergavenny. So now, it’s not only the food that’s local at Llys Meddyg. With Dan leading the team, the kitchen has a distinctly Welsh flavour.
Hailing from Fishguard, Dan has spent the last eight years in training, it would seem, to come home again. He brings with him all the ingredients for a great kitchen; talent, passion and unequalled determination. Put this together with up and coming sous Chris Walker (Solva), super keen commis Rhys Sajko (Newport) and Elsbeth Goellnitz (St Dogmaels), this Pembrokeshire team is set to create magic with the best of Pembrokeshire Produce.
